Maximus Brouwerij Witlove
This refreshing Witbier pours a pale straw with a characteristic milky haze and a persistent, dense white head. The iconic Hoegaarden yeast provides a classic foundation of spicy phenols and subtle fruit esters, beautifully enhanced by the addition of lemon balm and yarrow flowers harvested from Voedselbos Haarzuilens. The aroma is a bright bouquet of citrus zest, chamomile-like florals, and soft wheat breadiness. On the palate, a light creaminess from the grain bill gives way to crisp flavors of lemon and herbal spice. It finishes dry and highly effervescent, with a delicate, lingering botanical complexity.
Appearance. 2–4 SRM. Very pale straw to light yellow. Distinctly cloudy with a milky, whitish-yellow glow. Thick, dense, moussy white head with excellent retention and lacing.
Aroma. Moderate intensity. Soft, bready wheat maltiness with hints of honey. Pronounced lemony-citrus notes from lemon balm blend with the spicy-perfumy phenols of Hoegaarden yeast. A unique herbal, floral character from yarrow flowers adds complexity, reminiscent of dried herbs or wildflowers.
Taste. Initial bready, grainy malt sweetness quickly met by zesty lemon balm and a subtle herbal complexity from yarrow. High yeast-derived spicy notes. Hop bitterness is low, allowing the botanical ingredients to shine. Very refreshing with a crisp, dry finish and a light, lingering citrus-herbal aftertaste.
Mouthfeel. Medium-light body with a smooth, slightly creamy texture. High carbonation provides a lively, effervescent sparkle on the tongue. No alcohol warmth; exceptionally refreshing and crisp.
