This Imperial Stout represents a sophisticated convergence of deep roasting and refined spirit character. By blending Russian Imperial and Oatmeal Imperial Stout bases, this expression undergoes an extensive maturation in Westward Whiskey barrels, which imparts elegant nuances of charred oak, soft vanilla, and subtle spice. The aromatic profile is dense with espresso, bittersweet chocolate, and black licorice, bolstered by a luscious, velvety texture from the oatmeal. Deep notes of raisin and prune emerge on the palate, balanced by a firm hop bitterness and the smooth, warming presence of its significant alcohol. It concludes with a harmonious interplay of cocoa and a lingering whiskey-laced depth.
Appearance. Opaque, jet black color (40 SRM). A thick, deep tan head forms with moderate retention, eventually receding to a persistent ring that leaves oily legs on the glass, indicative of high viscosity and alcohol.
Aroma. High intensity with a rich blend of roasted coffee, dark chocolate, and molasses. Distinctive barrel notes from Westward Whiskey provide aromas of vanilla and toasted oak. Moderate esters suggest dried fruits like prunes and figs, while a low earthy hop character sits in the background.
Taste. Intense and complex flavors of roasted grain, burnt sugar, and dark cocoa. The whiskey barrel aging adds layers of caramel and oak tannins that complement the malt sweetness. Bitterness is firm but well-integrated, balancing the rich body. The finish is long and bittersweet, with lingering notes of dark fruit and warming alcohol.
Mouthfeel. Very full-bodied and chewy with a velvety, luscious texture enhanced by the oatmeal component. Carbonation is low to moderate. A smooth, gentle alcohol warmth is present throughout without being sharp or solventy.

This year’s release is a culmination of 2 different stouts including Russian imperial stout and oatmeal Imperial stout aged in Westward Whiskey barrels. While this one might not be coming straight from Bourbon County, we still get thirsty here in Thurston County, and this is our solution!
