Celebrating eight years of craft, this singular expression of a Saison is drawn directly from the brewery’s original oak Foudres. Through the solera process, the beer has developed a sophisticated profile where fresh layers meet aged complexity. It pours a hazy pale gold, releasing vibrant aromas of lemon peel, white pepper, and a soft, woody vanilla. The palate is defined by a rustic grain character and moderate peppery phenols, balanced by a faint, refreshing tartness from its time in the wood. It is bone-dry and highly effervescent, finishing with a clean, lingering oak-driven crispness that honors its traditional farmhouse roots.
Appearance. Pale gold with a slight haze from the solera blending process. Pours with a dense, rocky ivory head that exhibits excellent retention and leaves intricate Belgian lace. Highly effervescent.
Aroma. Moderate to high intensity. Dominated by a complex blend of spicy black pepper phenols and fruity esters reminiscent of dried apricot and Meyer lemon. A distinct but subtle oak character provides notes of vanilla and parchment, alongside a faint, rustic earthy funk.
Taste. Initial impression is bright and refreshingly tart. Grainy, soft malt flavors lead into a mid-palate of spicy yeast character and citrus zest. Hop bitterness is low to moderate, allowing the mild acidity and oak tannins to provide structure. The finish is bone-dry and lingering, with a clean, woody aftertaste.
Mouthfeel. Medium-light body with very high carbonation, creating a prickly, effervescent sensation on the tongue. Minimal alcohol warmth. Features a light, pleasant astringency from the oak contact.

Every year fresh beer gets blended into these tanks, commingling with the aged beer already inside. This is known as the solera process. Although this beer is typically used as a base for our fruited sours, we wanted to bring this beer to you straight out of the Foudre to celebrate 8 years.
