This opulent Experimental Mead presents a masterclass in layered fruit complexity, blending the intense, tannic structure of Stevnsbær cherries with the jammy, succulent depth of Loch Ness blackberries. Twelve months in OHD Fjæra gin barrels introduces sophisticated botanical nuances of juniper and soft oak, underpinned by a faint vinous legacy from previous red wine aging. Hand-zested lime and juice provide a bright, citrus-driven aromatic lift, evoking the zesty profile of a classic Bramble cocktail. The wildflower honey base provides a plush, velvety sweetness that balances the firm fruit acidity, resulting in a rich, deeply colored elixir with a lingering, aromatic finish.

Appearance. Deep ruby-purple to opaque garnet; brilliant clarity with a heavy, viscous pour that exhibits persistent legs (tears) on the glass. No foam or carbonation is present, characteristic of a still mead.

Aroma. High intensity and extremely complex. Dominant notes of dark, sun-ripened blackberries and tart Stevnsbær cherries are complemented by a sharp, aromatic lime zest lift. Secondary notes include juniper, botanical gin spice, and subtle toasted oak, all supported by a sweet, floral wildflower honey foundation.

Taste. An initial impression of intense sweetness and concentrated blackberry nectar. The mid-palate features the signature tartness of Stevnsbær cherries and bright, zesty lime acidity. Complex barrel character emerges in the finish, offering juniper, light wood tannins, and a hint of vinous red wine. The balance is sweet but firm, with a long, lingering fruit and botanical aftertaste.

Mouthfeel. Full-bodied and highly viscous with a syrupy, mouth-coating texture. Carbonation is absent (still). A noticeable but well-integrated alcohol warmth provides a pleasant glow without being harsh. No significant astringency despite the fruit skins and oak aging.
