This Melomel presents a concentrated sensory profile defined by the legendary Stevnsbær cherry, often called the 'Nordic Grape'. The aroma is intense, led by deep dark fruit, floral Wildflower honey, and subtle notes of marzipan and cinnamon. On the palate, the semi-sweet structure balances lush cherry sugars with the firm tannins of cherry skins and six months of conditioning on oak staves. The oak imparts delicate vanilla and added volume to the mouthfeel. This vintage is remarkably complex, finishing with a lingering harmony of honeyed sweetness and the distinctive, tart complexity of the Stevns variety.
Appearance. Brilliant clarity; deep burgundy to dark ruby color with significant legs. As a still mead, there is no foam, head, or carbonation present.
Aroma. High intensity aroma of ripe Stevnsbær cherries and floral Wildflower honey. Subtle almond-like marzipan and light cinnamon notes emerge from the cherry pits and skins, complemented by a soft vanilla character from oak conditioning. Clean fermentation with no esters or phenols.
Taste. Initial impression is a burst of rich cherry fruit and honey sweetness. The Stevnsbær provides a complex, grape-like acidity that balances the residual sugar. Oak-derived tannins and cherry skins provide structural grip. Flavors of vanilla, almond, and light spice linger through a semi-sweet, clean, and lengthy finish.
Mouthfeel. Full-bodied and viscous with a mouth-coating texture. Still carbonation. A noticeable but smooth alcohol warmth from the 12% ABV is present, accompanied by a light, pleasant tannic astringency from the oak and fruit skins.
