Marlobobo

This exquisite Fruit Mead showcases the celebrated Stevnsbær cherry, often called the "Nordic Grape," in a concentrated, waterless expression. Its deep burgundy profile radiates intense aromas of ripe stone fruit intertwined with the floral complexity of wildflower honey. On the palate, a lush semi-sweetness reveals layers of almond, cinnamon, and vanilla, derived from the unique cherry variety and careful oak aging. The experience is defined by the seamless integration of fruit acids and structural tannins from cherry skins, providing a sophisticated, lingering finish that highlights the purity of the ingredients without any water dilution.

Appearance. Deep burgundy to dark ruby color; brilliant clarity. No head or foam formation (still). High viscosity is apparent with slow-forming, heavy legs on the glass.

Aroma. High intensity. Dominant aroma of concentrated dark cherries and marzipan. Spicy notes of cinnamon and vanilla emerge alongside the floral, earthy character of wildflower honey. Very clean fermentation profile with a soft, well-integrated alcohol presence and subtle toasted oak.

Taste. Initial impression is an explosion of pure cherry flavor, balanced between tart skin and sweet flesh. The wildflower honey provides a rich, floral backdrop. Mid-palate introduces complex notes of almond, cinnamon, and a touch of oak-derived vanilla. Hop bitterness is absent, replaced by a structural tannic grip from the fruit skins and oak. Semi-sweet, fruit-forward finish that lingers extensively with honey and spice.

Mouthfeel. Full-bodied and viscous with a velvety, mouth-coating texture. Carbonation is absent (still). A noticeable but smooth alcohol warmth provides a comforting glow. Slight astringency from fruit tannins adds necessary structure.

Expect a cherry forward, semi-sweet mead with a lingering finish of honey, cherries, and notes of almond, cinnamon and vanilla. The well integrated tannins from cherry skins and oak ties it all together.
