SCHAARBEE (2023) is an opulent Fruit Mead that showcases the intense depth of Schaarbeekse cherries atop a complex wildflower honey base from Konnerud. The sensory experience is dominated by an explosive aroma of tart cherries and nuanced honey layers, revealing delicate hints of wild blueberry, raspberry, and lingonberry nectar. On the palate, the sharp, vibrant acidity of the Telemark-grown cherries provides a sophisticated counterpoint to the honey’s earthy chestnut and floral dandelion notes. This melomel is viscous and structured, offering a luxurious mouthfeel where the high alcohol is seamlessly woven into a long, bittersweet finish of concentrated fruit and wild botanicals.
Appearance. Deep ruby to garnet-red color with brilliant clarity. Viscous and heavy-bodied, exhibiting slow-moving, thick legs on the glass. Typically still with no head or carbonation.
Aroma. High intensity of concentrated sour cherries; complex wildflower honey character with distinct floral notes, hints of wild raspberry, blueberry, and an earthy chestnut undertone. No hops or malt presence. Fermentation is clean with no off-flavors.
Taste. Initial impression is a bold, tart cherry flavor followed by a rich honey sweetness. The honey provides layers of floral and dark berry fruitiness. Balance is slightly acidic due to the Schaarbeekse cherries, which prevents the high honey content from becoming cloying. Finish is long and lingering with a pleasant fruit-skin tannin and warming alcohol.
Mouthfeel. Full-bodied and viscous with a syrupy texture. Carbonation is absent (still). Significant, smooth alcohol warmth is present. Minor astringency from cherry skins adds structure without being harsh.
