Multiversal Escapism (2020) is a concentrated expression of fruit and flower, defined by an intense saturation of locally sourced Agat raspberries and Raspberry Blossom honey. This Melomel pours with a deep, vibrant hue, offering a perfume that is both sharply tart and delicately floral. On the palate, the small Agat raspberries provide a dense, jammy complexity that balances the rich, unadulterated sweetness of the honey. Fermented slowly to preserve fragile esters, it reveals a luxurious, full-bodied texture without any water dilution, finishing with a lingering, bright acidity and a sophisticated, well-integrated warmth at twelve percent alcohol.
Appearance.Deep ruby to garnet with brilliant clarity. This still mead features no foam or carbonation. High viscosity creates slow, thick legs and a heavy coating on the glass.
Aroma.High intensity of fresh, ripe raspberries and concentrated raspberry jam. The Raspberry Blossom honey provides a distinct floral lift, reminiscent of white flowers and nectar. Clean fermentation profile with very low, soft alcohol notes and no oxidation.
Taste.Initial impression is an explosion of concentrated raspberry flavor with a bright, acidic snap. This is supported by a rich, multi-layered sweetness from the honey. The balance is moderately sweet but tempered by the high natural acidity of the fruit. The finish is long and lingering, tasting of pureed berries and floral honey.
Mouthfeel.Full, luscious, and syrupy body with a velvety texture. Still carbonation with a noticeable, well-integrated alcohol warmth. No perceived astringency from fruit skins or seeds.
