This opulent Fruit and Spice Mead showcases a masterful balance between vibrant acidity and decadent sweetness. Deep, jammy blackberry notes burst forward, immediately met by a luxurious layer of double-origin vanilla from Uganda and Madagascar. The use of caramelized heather honey introduces a sophisticated, toasted complexity reminiscent of marshmallow fluff and light toffee, while wildflower honey provides a delicate floral lift. The palate is thick and coating, where the bold tartness of the berries is expertly tempered by the earthy richness of the honey, finishing with a lingering, sweet warmth and a kiss of creamy spice.

Appearance. Deep, saturated opaque purple with ruby highlights. High viscosity is apparent through slow-forming legs on the glass. Still to very lightly carbonated with no significant head formation.

Aroma. High intensity aromatics of fresh, tart blackberries and dark berry jam. Prominent vanilla presence offers floral, creamy, and woody nuances. The honey character is complex, featuring earthy heather, wildflower florals, and distinct caramelized sugar or toasted marshmallow notes. Clean fermentation with no detectable phenols or acetic notes.

Taste. Explosive initial impression of juicy blackberries and sharp fruit acidity. The mid-palate is dominated by a rich, honeyed sweetness and heavy vanilla creaminess. Caramelized heather honey provides an earthy, savory depth that prevents the sweetness from becoming cloying. The finish is long and lingering, balancing the fruit’s natural tartness against a sticky, resinous honey profile. No hop bitterness is present.

Mouthfeel. Medium-full to full body with a smooth, syrupy texture. Carbonation is very low to still. A noticeable but well-integrated alcohol warmth reflects the 10% ABV. No fruit-skin astringency; the mouthfeel is primarily creamy and velvet-like.
