Brainbow (2022) is a vibrant, acid-driven Melomel that captures the essence of red currants. By utilizing short skin contact, the sensory profile focuses on the bright, juicy acidity of the berries without the interference of earthy tannins. The aroma is a fragrant interplay between the tart fruit and the delicate, floral notes of raspberry blossom honey, supported by the multi-layered complexity of Hadeland and Lillesand wildflower honeys. On the palate, the experience is intensely fruity and mouth-watering, with the honey’s natural sweetness balancing the sharp currant snap. The lack of added water results in a luxurious, viscous texture and a clean, lingering finish.
Appearance. Luminous ruby to deep rose color (SRM 10-15); brilliant clarity with no haze. Completely still with no head formation or lacing, displaying significant legs (tears) due to the 13% ABV and high sugar content.
Aroma. High intensity of fresh, tart red currants. Strong floral and fruity honey character, specifically notes of raspberry blossom and delicate wildflower nectar. Clean fermentation profile with no phenolics or harsh fusels; subtle, well-integrated alcohol warmth.
Taste. Initial impression is an explosion of tart red currant juice. High acidity provides a mouth-watering sensation that prevents the significant honey sweetness from becoming cloying. The raspberry blossom honey lends a light berry-floral flavor, while the wildflower honeys add a deep, earthy complexity. No hop bitterness or tannin-derived astringency is present. The finish is long, sweet-tart, and exceptionally fruity.
Mouthfeel. Full-bodied and viscous (Sack-strength mead) with no carbonation. Smooth, syrupy texture that coats the palate. Noticeable, pleasant alcohol warmth without being hot or solventy. No astringency from skins or seeds.
