Samuel is a vibrant Wild Specialty Beer crafted as a liquid interpretation of lemon pie. This collaboration between Maresme Brewery and CoolHead highlights a bright, zesty profile led by fresh Lemon Peel. Vanilla additions provide a fragrant, confectionery aromatic that softens the lactic tang, while Lactose builds a creamy, dessert-like structure. This pastry sour balances a sharp, citrus acidity with a smooth, velvety sweetness reminiscent of meringue and buttery shortcrust. The result is a sensory-focused ale where the citrus zing is perfectly tempered by the lush, rounded mouthfeel and the aromatic warmth of vanilla, offering a complex yet approachable dessert profile.

Appearance. Bright yellow to pale gold (SRM 3-5). Hazy to nearly opaque with a persistent white head that shows moderate lacing, though the acidity may cause the foam to recede more quickly than a standard ale.

Aroma. High intensity with a dominant punch of fresh lemon zest and lemon curd. Distinctive sweet vanilla notes provide a marshmallow-like contrast, supported by a subtle bready malt character and a clean, lactic sourness that lacks funky Brettanomyces character.

Taste. A sharp, tart initial impression of lemon juice and peel. The mid-palate is immediately rounded out by the unfermentable lactose and rich vanilla, creating a creamy lemon-meringue flavor. Hop bitterness is negligible, allowing the lactic acidity to provide the primary balance against the lingering, sweet, and custardy finish.

Mouthfeel. Medium-full body with a notable creaminess and coating texture provided by the lactose. Moderate carbonation with very low alcohol warmth and no perceptible astringency from the citrus peel.
