This Straight Sour Beer offers a refreshing, sharply acidic profile driven by clean lactic sourness and a distinctive, lovely funkiness. The aroma is dominated by lemony citrus and tart green apple esters, supported by a subtle, clean backdrop of biscuity pale malt. Effervescent and pale straw in color, it presents a crisp palate where the sharp acidity takes center stage, washing over soft crackery notes and grainy malt depth. Without any hop interference, the finish remains dry and bright, highlighting a puckering tartness that perfectly balances the light, airy body and high carbonation for a revitalizing experience.

Appearance. Very pale straw to light yellow (2-3 SRM). Clarity ranges from clear to slightly hazy. Features a large, dense, white head with typically poor retention and high effervescence.

Aroma. Moderately-high to high intensity of sharp, lactic sourness. Complementary fruity notes of lemon and tart green apple are prominent. Low malt character of crackery or biscuity pale malt provides a neutral base. No hop aroma or Brettanomyces funk is expected.

Taste. Dominated by a clean, strong lactic sourness. Subtle bready and grainy malt flavors provide a brief foundation before the acidity takes over. Hop bitterness is undetectable, allowing the lemony fruitiness to shine. The finish is very dry and crisp with no hop flavor and a clean aftertaste.

Mouthfeel. Light-bodied with high carbonation that enhances the refreshing qualities. Noticeable crisp acidity without any harshness or vinegar-like burn. Alcohol warmth is absent at this ABV.
