Poirot is a vibrant Wild Specialty Beer that captures the essence of a summer orchard. A delicate base supports layered fruit profiles, leading with the aromatic sweetness of juicy pear followed by a sharp, invigorating redcurrant tang. The wild fermentation imparts a gentle acidity that elevates the palate without overwhelming the subtle malt backbone. This session-strength ale displays a clean, spritzy character, offering a refreshing harmony of sweet fruit esters and tart berry notes. It finishes exceptionally crisp and dry, making it an ideal choice for sunshine sipping where bright fruit and wild complexity converge.
Appearance. SRM 3–6; pours a pale straw with a soft rose-colored tint from the redcurrant. Clarity is slightly hazy. The head is white with a faint pinkish hue, exhibiting low retention and minimal lacing.
Aroma. High intensity aromatics of fresh, ripe pear and tart redcurrant dominate the nose. The wild fermentation character is evident through light earthy funk and mild lactic sourness. Malt is very low and crackery; no hop aroma is perceived.
Taste. The initial impression is a bright burst of redcurrant acidity followed by the mellow, fruity sweetness of pear. The fermentation provides a clean, gentle sourness that balances the fruit. Hop bitterness is negligible (low IBU context), as the structure is driven by acidity. The finish is short, dry, and refreshing with a lingering tart berry aftertaste.
Mouthfeel. Light body with high, prickly carbonation that enhances the spritzy sensation. Alcohol warmth is non-existent. A very slight tannin-driven astringency from the redcurrant skins adds structure without being harsh.
