This sophisticated Blended Red Ale, a collaboration between Marble and Zapato, showcases a masterful mixed-fermentation profile. A sharp, clean lactic sourness driven by Lactobacillus and Pediococcus is artfully tempered by the rustic, leathery funk of Brettanomyces. The maturation process provides incredible depth, weaving together the charred oak and vanilla of bourbon barrels, the dark sugar complexity of rum casks, and the vinous, tannic structure of red wine wood. The malt backbone offers toasted grain and dried fruit notes characteristic of a red ale, resulting in a deeply layered, tart, and soul-warming Straight Sour Beer with a persistent, dry finish.
Appearance. Deep ruby to burnished copper (15–22 SRM). Moderate off-white to light tan head with fair retention and fine lacing. Generally clear, though a faint haze may be present from extended wood aging.
Aroma. High intensity. A dominant sharp lactic sourness is complemented by a complex wild funk featuring notes of leather, earthy hay, and horse blanket. Deep malt aromatics of caramel and toasted bread are layered with barrel-derived vanilla, coconut, and dark cherry, alongside a subtle boozy sweetness from the rum and red wine influence. No hop aroma.
Taste. Initial impression is a bold, clean lactic sourness that transitions into a rich tapestry of barrel-driven flavors. Toasted malt, plum, and raisin notes provide a base for bourbon-derived vanilla and rum-soaked oak. The acidity is firm but never vinegary, balanced by the vinous tannins of red wine barrels. The finish is very dry and lingering with a puckering tartness. No hop flavor or bitterness.
Mouthfeel. Medium body with a lively, moderate-to-high carbonation that accentuates the acidic crackle. A noticeable but well-integrated alcohol warmth is present. Low astringency with a structured, slightly drying grip from the wood tannins.
