This celebratory Imperial Stout presents an opulent sensory experience, defined by its 14-month maturation in Heaven Hill Bourbon barrels and the infusion of HAYB Costa Rica Finca El Mirador barrel-aged coffee. The aroma is dominated by rich espresso, dark chocolate, and the distinct vanillin and charred oak of the bourbon barrels. On the palate, a luxurious, viscous body carries deep roasted malt flavors intertwined with notes of red berries and caramel from the specialized coffee beans. The finish is remarkably long, showcasing a harmonious balance between spiritous warmth, smooth bitterness, and a lingering sweetness reminiscent of molasses and fine leather.
Appearance. Opaque, jet black (SRM 40+). Pours with a thick, dense, persistent mocha-colored head that leaves oily legs on the glass.
Aroma. High intensity. Prominent roasted coffee and dark chocolate dominate, supported by a secondary layer of bourbon character—specifically vanilla, toasted oak, and a hint of coconut. Malt notes of black walnut and molasses are evident. Low esters suggesting dark dried fruits like plum or raisin. No hop aroma.
Taste. Initial impression is of intense richness and sweetness. Strong flavors of dark-roasted coffee provide a nuanced acidity and berry-like fruitiness. The malt profile is complex, featuring burnt sugar, bittersweet chocolate, and heavy toast. Barrel aging contributes smooth bourbon, spicy oak, and marshmallow notes. Bitterness is medium-high but softened by the residual sugar. The finish is long and warming with a clean spiritous quality.
Mouthfeel. Full-bodied and viscous, bordering on chewy. Low to moderate carbonation. Significant but well-integrated alcohol warmth. Smooth and creamy texture with no significant astringency despite the heavy roast and coffee.
