Gate Nº5/2021 is a decadent Imperial Stout designed to evoke the indulgent character of chocolate ice cream. Heavy saturation of cocoa nibs and Madagascar vanilla beans creates a rich, dessert-like profile, further softened by the addition of milk sugar for a creamy texture. Extensive aging in Heaven Hill bourbon barrels contributes sophisticated layers of charred oak, toasted coconut, and a smooth spirituous warmth. The malt backbone provides a deep foundation of bittersweet chocolate and espresso, while the barrel influence rounds out the finish with notes of dark caramel and vanilla. It is an intensely flavored, harmonious sipper that balances roast intensity with luscious sweetness.
Appearance. Jet black and opaque (SRM 40+). Pours with a dense, persistent dark tan head that leaves thick lacing on the glass. High viscosity is evident in the form of visible legs when swirled.
Aroma. High intensity. Dominant aromas of rich bittersweet chocolate and cocoa nibs are supported by prominent Madagascar vanilla. The Heaven Hill barrel aging provides secondary layers of bourbon-soaked oak, caramel, and a hint of coconut. Subtle dark fruit esters of raisin and prune mingle with deep-roasted coffee and a moderate, smooth alcohol presence.
Taste. The initial impression is intensely sweet and chocolate-forward, reminiscent of liquid fudge. Layers of dark chocolate and cocoa nibs dominate the mid-palate, complemented by creamy vanilla and a noticeable milk sugar sweetness. The bourbon barrel influence introduces charred oak and spicy spirit notes that provide complexity. Low to moderate bitterness is present but largely masked by the malt and adjunct sweetness. The finish is long and luscious, featuring lingering notes of chocolate, vanilla, and gentle bourbon warmth.
Mouthfeel. Full to very full-bodied with a chewy, velvety, and luscious texture enhanced by the lactose. Carbonation is low to moderate. A noticeable but smooth alcohol warmth is present, well-integrated and never harsh or solventy.
