The influence of the Bourbon aging introduces subtle layers of vanilla and toasted oak, which elegantly complement the spicy, peppery yeast character. Appearance. Deep coppery-brown in color with excellent clarity. It features a huge, dense, moussy, and persistent light tan-colored head that leaves significant lacing on the glass.
Aroma. High intensity with a complex blend of rich, bready-toasty malt and dark caramel. Prominent esters of raisins, prunes, and dates are bolstered by a noticeable vanilla and toasted oak presence from the bourbon influence. The mid-palate is dominated by dark fruit notes of black cherries and plums, harmonized with bourbon-derived wood tannins. Bitterness is medium-low, providing balance to the malt-rich palate. The finish is moderately dry with lingering spicy yeast and subtle oak character.
Mouthfeel. Medium-full body with a smooth, creamy texture. High carbonation provides a lively mouthfeel that is not sharp. A gentle, well-integrated alcohol warmth is present, contributing to the beer's smooth character.
