This Double IPA presents as a potent American hop bomb, delivering an intense sensory experience driven by a quartet of Citra, Simcoe, Mosaic, and Columbus. The use of New England yeast lends a subtle fruity softness that balances the strength of the 7.8% ABV, creating a profile that feels both robust and remarkably approachable. Expect an explosion of resinous pine, tropical mango, and bright citrus zest that dominates the senses. Despite the aggressive hopping, the malt remains a clean, supportive backdrop of light grain, ensuring the vibrant hop character remains the primary focus of this aromatic and deeply layered ale.
Appearance. Deep gold to light copper (8-10 SRM) with a slight, persistent haze from the New England yeast. Features a moderate, creamy, off-white head with excellent retention and significant lacing.
Aroma. Intense hop aroma characterized by tropical mango, passion fruit, and bright grapefruit. Secondary notes of resinous pine and damp earth follow. Malt is low and neutral, providing a grainy backdrop, while fermentation esters are lightly fruity.
Taste. Initial impression is a burst of citrus and tropical fruit flavors from Citra and Mosaic. High bitterness is firm but smooth, lacking harshness. Mid-palate reveals resinous Simcoe and herbal Columbus notes. The malt is soft and unobtrusive, resembling light crackers. Finishes dry and clean with a lingering, pleasant hoppy bitterness.
Mouthfeel. Medium body with a soft, smooth texture influenced by the yeast strain. Carbonation is moderate-high, providing a lively prickle. A gentle, well-integrated alcohol warmth is present but never solventy.
