Fermented with Brettanomyces and matured in wine barrels, the profile balances farmhouse funk with delicate floral notes of crushed rose petals and bright lemon zest. The barrel aging introduces structured nuances of vanilla wood and roasted almonds, which temper the high attenuation typical of the style. Natural bottle conditioning ensures a pillowy effervescence, lifting aromas of green apple and spice. It is a masterful interpretation of a wild ale, where the fruit’s natural astringency provides a refreshing, wine-like structure against a dry, grainy malt backbone.

Appearance. Pale gold to deep orange with a slight haze from the fruit and yeast. Features a long-lasting, dense, pillowy white head that leaves significant Belgian lace.
