This barrel-aged Saison offers a complex, wild evolution of the farmhouse tradition. Fermentation with Brettanomyces and aging in wine barrels introduce a delicate funk and a bright, thirst-quenching acidity. The addition of Sabro hops provides a unique layer of coconut cocktail and aromatic cedar wood, underscored by refreshing notes of mint oil and green tea. It pours with a soft, pillowy foam, leading into a dry, rustic profile where the grainy malt character is balanced by distinctive wild American hop traits. The result is a vibrant, sophisticated ale that bridges the gap between traditional Belgian fermentation and modern botanical complexity.

Appearance. Pale gold (6 SRM) with a slight haze. Features a long-lasting, dense, rocky ivory head with excellent Belgian lacing and high effervescence.

Aroma. High intensity aromatic profile featuring a mix of tropical Sabro hops—specifically coconut and mint—blended with Brettanomyces-driven earthy funk. Notes of cedar wood and green tea are present alongside moderate fruity esters and a light, grainy malt background.

Taste. Initial dry impression with moderate to high bitterness and a subtle, refreshing acidity. Malt flavor is low and grainy, supporting complex hop notes of coconut, cedar, and herbal green tea. Fermentation character includes spicy pepper and mild funk, finishing very dry with a lingering, crisp aftertaste.

Mouthfeel. Medium-light body with very high carbonation. Presents a light alcohol warmth and a prickly, effervescent sensation. Includes a subtle, soft astringency from the wine barrel aging.
