This Wild Specialty Beer presents a vibrant interplay between New Zealand hops and forage-inspired adjuncts. Aromatics of zesty lime from Motueka and lush apricot from Rakau blend seamlessly with the deep floral berry notes of tayberry. The wild fermentation provides a rustic backdrop of hay and funk, while lemon peel brightens the profile. A subtle, earthy pistachio richness adds unexpected depth to the mid-palate. On the tongue, a sharp but refined acidity amplifies the tart tayberry and citrus, leading to a crisp, bone-dry finish that emphasizes the expressive character of the fruit and hops.

Appearance. Pours a hazy, glowing rose-pink (6-10 SRM) with a fast-fading white head that leaves minimal lacing. Some cloudiness is expected from the fruit additions and pistachio oils.

Aroma. High intensity. Bright lime and tropical fruit from Motueka hops meet stone fruit notes of Rakau. Dominated by tart tayberry and fresh lemon zest, underpinned by a moderate barnyard funk, wet hay, and a faint, savory pistachio nuttiness.

Taste. Initial sharp tartness of tayberry and lemon juice. The hop-derived peach and lime flavors transition into a complex, funky middle with light sourdough notes. Low bitterness. Pistachio contributes a light earthy character before a clean, lingering lactic acidity and a dry, slightly tannic finish.

Mouthfeel. Light-medium body with a brisk, high carbonation that scrubs the palate. Very light alcohol warmth and a hint of fruit-skin tannin provide structure and an enhanced sense of dryness.
