Appearance. Pale gold to deep straw (3–5 SRM). Characteristically hazy or cloudy due to being unfiltered. Displays a vigorous, white effervescent head upon pouring that quickly dissipates into a lively ring of bubbles.
Aroma. High intensity of fresh, ripe apples and apple skin. Subtle floral notes and a light, bready yeast character from bottle-conditioning. Clean fermentation profile with no significant esters other than apple-derived fruitiness.
Taste. Initial impression is of tart, crisp apple acidity transitioning into a richer, fuller apple fruitiness. Malt and hop flavors are absent, replaced by a delicate balance of natural fruit sugars and a firm, structural dryness. Bitterness is zero, though a light tannic grip provides complexity. Finish is clean and lingering with a persistent apple aftertaste.
