The addition of sesame crackers introduces a unique layer of toasted grain and nutty savoriness that complements the rustic, wild fermentation character. Despite its 18 Plato starting gravity, the wild yeast ensures a crisp delivery, though it retains more textural presence than a typical sour. The result is a complex, multi-dimensional ale where zesty acidity meets a lingering, cracker-like finish.
Appearance. Pours a deep ruby-red to pinkish-orange with a moderate, light-pink head that shows fair retention. The beer exhibits a noticeable haze, likely from the fruit solids and sesame cracker additions, bordering on opaque.
Aroma. High aromatic intensity. Immediate notes of tart black cherry and floral yuzu zest dominate. Beneath the fruit, a distinct toasted nuttiness and savory grain scent from the sesame crackers emerge, supported by a light lactic sourness and faint earthy funk from the wild fermentation.
Taste. The initial impression is one of sharp, clean acidity followed by a wave of ripe cherry and zesty citrus pith. The mid-palate reveals the sesame cracker influence, contributing a salty-toasted quality and a savory cracker-like depth. Hop bitterness is very low, with most bitterness derived from the yuzu skins. It finishes dry and tart with a lingering, nutty aftertaste.

Carbonation is moderate, providing a gentle prickle that cleanses the palate. Alcohol warmth is very low and well-integrated; no significant astringency is present despite the heavy fruit and cracker load.
