A vibrant and indulgent Wild Specialty Beer that bridges the gap between tropical tartness and dessert-like richness. The aroma is dominated by a punchy, fresh mango puree and the sharp, zesty tang of passionfruit, underscored by a luscious custard and burnt sugar depth reminiscent of creme brulee. On the palate, a clean lactic acidity balances the perceived sweetness of the tropical fruits and velvety vanilla. The high starting gravity provides a substantial, smoothie-like texture that carries the complex layers of fruit and cream into a lingering, fruit-forward finish with just a whisper of wild fermentation funk.
Appearance. Deep golden-orange with a heavy, opaque nectar-like turbidity (approximately 8-10 SRM). Pours with a thick, frothy, pale-orange head that fades quickly to a persistent collar; minimal lacing due to high fruit solids.
Aroma. High intensity aromatics of ripe, pulpy mango and sharp passionfruit seeds. Secondary notes of vanilla bean and caramelized sugar provide a rich, dessert-like backdrop. Low level of earthy wild yeast character; clean lactic sourness provides a bright lift to the heavy fruit profile.
Taste. Initial impression is a burst of tart tropical fruit—vivid mango and acidic passionfruit. The mid-palate reveals a creamy, vanilla-forward custard sweetness that rounds out the sharp edges. Hop bitterness is non-existent. The finish is long and fruit-rich, balancing a soft lactic tang with a residual sweetness from the creme brulee elements.
Mouthfeel. Medium-full body with a thick, creamy, and viscous texture. Carbonation is moderate and soft, helping to scrub the palate. No alcohol warmth at 5% ABV. Very low astringency despite the high fruit concentration.
