This high-gravity Eisbock presents an intense sensory experience, concentrating the decadent flavors of a coconut pastry stout through freeze-distillation. The aroma is dominated by rich, toasted coconut and deep Maillard products, reminiscent of a Bounty bar, layered over intense bready malt and dark chocolate. On the palate, a viscous, full-bodied sweetness is balanced by a potent, smooth alcohol warmth from its 18% ABV. Expect a complex interplay of dark fruit esters like plums and raisins with creamy coconut, finishing with a lingering, velvety richness. The absence of hop character ensures the focus remains entirely on the concentrated malt and coconut adjunct profile.

Appearance. Deep dark brown with ruby highlights at the edges; opaque to slightly hazy due to the inclusion of adjuncts. The tan head is minimal and fleeting, typical of high-alcohol ice-distilled beers, leaving thick, viscous legs on the glass.

Aroma. High intensity; dominated by toasted coconut and sweet pastry-like aromas. Beneath the adjuncts lies a rich, bready malt core with notes of dark caramel and cocoa. Significant but clean alcohol presence without solvent harshness; dark fruit esters such as raisin and prune are evident. No hop aroma.

Taste. Intensely rich and sweet; heavy flavors of toasted coconut and milk chocolate dominate the initial sip. The mid-palate reveals concentrated Maillard flavors including toasted bread crust and deep caramel. Hop bitterness is low, providing just enough structure to prevent a cloying finish, while the high alcohol provides a significant, smooth warmth that dries out the aftertaste. No hop flavor is present.

Mouthfeel. Very full-bodied and viscous; creamy and silky texture enhanced by the coconut. Carbonation is low. Significant alcohol warmth is present but well-integrated, avoiding sharp or burning sensations despite the extreme concentration.
