This Specialty IPA presents a striking sensory duality, where dark aesthetics meet vibrant hop intensity. The aromatic profile is dominated by the bright citrus and tropical notes of Citra, layered over the grounding, resinous pine and subtle earthy tones of Simcoe. On the palate, restrained chocolate and light toasted malt flavors provide a smooth, dark foundation without the harshness of heavy roasting or ash. A firm bitterness cleanses the tongue, leading into a dry, hop-persistent finish. It captures the essence of the style by balancing the drinkability of a standard IPA with the complex, shadowy character of debittered specialty grains.

Appearance. Opaque black with dark mahogany highlights at the edges (35-40 SRM). Topped by a persistent, creamy, light tan head with excellent lacing.

Aroma. High intensity. Dominant grapefruit, lime, and passionfruit from Citra, complemented by woodsy pine and a hint of berry from Simcoe. The malt presence is subtle, offering hints of cocoa and toasted bread without burnt notes. Clean fermentation profile.

Taste. Assertive hop flavor mirrors the aroma with citrus zest and resinous pine. Moderate malt sweetness is quickly eclipsed by a medium-high bitterness. Low chocolate and coffee flavors from debittered malts provide depth but remain smooth and non-astringent. The finish is dry and lingering with a resinous aftertaste.

Mouthfeel. Medium-light body with moderate carbonation. Smooth texture with no astringency from the dark malts. Very light alcohol warmth appropriate for 5.5% ABV.
