This refreshing Gose centers on the succulent sweetness of French apricot puree balanced by the pungent, resinous character of organic rosemary. Fermented with Voss Kveik and acidified via Lactobacillus helveticus, the profile offers a sharp, clean lactic tang and subtle citrus esters. The inclusion of Sel de Guérande provides a mouthwatering mineral quality that enhances the fruit while tempering the acidity. It pours with a soft haze, delivering a complex interplay between stone fruit, herbaceous greenery, and a dry, saline finish. It is a vibrant, modern interpretation of the style with an elegant, lingering aftertaste.

Appearance. Yellow to pale gold (SRM 3-4) with a moderate to full haze. Presents a moderate white head with tight bubbles and fair retention. Distinctly effervescent.

Aroma. High intensity with a dominant aroma of ripe apricot and resinous rosemary. Low doughy wheat malt character is present, supported by a clean, sharp lactic sourness. Subtle citrus esters from the kveik fermentation and a light mineral sea salt note are detectable.

Taste. Initial impression is sharply tart and fruity. Features a moderate doughy malt flavor quickly overtaken by juicy stone fruit and herbaceous rosemary. Very low bitterness; the balance is firmly acidic. Light but noticeable salt character provides a savory mineral edge. Finishes very dry and refreshing with a lingering apricot and herb aftertaste.

Mouthfeel. Medium-light body with high, effervescent carbonation. The salt adds a distinct tingly, mouthwatering sensation and a slightly rounded mouthfeel despite the thinning effect of the acidity. No alcohol warmth.
