This complex barrel-aged Saison offers a multidimensional sensory experience, blending the rustic charm of a farmhouse ale with the bold additions of Apricot, Walnuts, Cocoa Beans, and Vanilla. On the nose, vibrant stone fruit from the apricot meets the earthy depth of walnut and a subtle, dark chocolate undertone from the cocoa. The palate is defined by a refreshing tartness that cuts through the creamy vanilla and nutty richness, supported by a grainy malt backbone. High attenuation ensures a crisp, bone-dry finish, while the barrel aging lends a sophisticated woody complexity to this collaboration with Vault City.

Appearance. Amber to copper (8-14 SRM) with a persistent, ivory, mousse-like head. Unfiltered and moderately hazy with visible effervescence.

Aroma. High intensity featuring a complex blend of tart Apricot and spicy, black pepper-like yeast esters. Earthy Walnut and subtle, dusty Cocoa Beans provide a savory depth, while Vanilla adds a rounded, sweet-scented floral note over a background of lactic acidity and light oak.

Taste. Immediate sharp tartness from the apricot and fermentation profile. The mid-palate reveals a soft, grainy malt character layered with nutty walnut and dry cocoa. Hop bitterness is low, as the sourness provides the primary balance against the malt. The finish is exceptionally dry and highly attenuated with lingering stone fruit and a touch of vanilla bean.

Mouthfeel. Medium-light body with very high carbonation providing an effervescent, prickly sensation. Low alcohol warmth and a slight creaminess from the vanilla that offsets the crisp, dry termination.
