Aromatics of sun-ripened Apricot and Peach lead the sensory experience, grounded by a signature spicy-phenolic yeast character typical of a Saison. The palate is exceptionally dry and effervescent, showcasing a grainy malt foundation that balances the lush fruit additions. A subtle, earthy funk adds layers of complexity, while the vanilla provides a rounding floral quality that softens the firm, peppery bitterness. The result is a vibrant, highly attenuated ale that remains crisp and refreshing despite its complex fruit and spice profile.
Appearance. Hazy, pale orange to golden-amber (7-9 SRM); features a dense, rocky, long-lasting ivory head with significant Belgian lacing.
Aroma. High intensity with dominant notes of fresh apricot and peach flesh. A moderate spicy phenol character resembling black pepper integrates with a soft, floral vanilla sweetness. Low earthy funk and a light, grainy malt presence are evident in the background.
Taste. Initial impression is of tart stone fruit, followed by a dry, grainy malt palate. Apricot and peach flavors are prominent, supported by a moderate peppery yeast character and low herbal hop notes. Bitterness is moderate and firm, leading to an exceptionally dry, crisp, and slightly spicy finish.
Mouthfeel. Medium-light body with very high, effervescent carbonation. The vanilla provides a perceived smoothness on the mid-palate, though the beer remains highly attenuated with no heavy finish. Alcohol warmth is very low.
