This American Farmhouse Ale presents a vibrant sensory experience, blending traditional Saison character with botanical complexity. The foeder aging introduces subtle oak-derived nuances that support a bright, fruity profile driven by Belgian yeast esters. Hibiscus imparts a distinct floral quality and a cranberry-like tartness, while the ginger adds a refreshing, spicy zing that complements the peppery phenolics of the style. High attenuation ensures a crisp, bone-dry finish, allowing the interplay of earthy wood, zesty spice, and floral botanicals to shine. It is an effervescent, refreshing take on a Saison that balances rustic wood aging with bold, contemporary adjuncts.
Appearance. 7-10 SRM; pale gold with a distinctive pinkish-ruby hue from hibiscus. Long-lasting, dense, rocky pink-tinged ivory head with excellent lacing. Slight haze from being unfiltered.
Aroma. High intensity; dominant notes of spicy ginger and floral hibiscus. Fruity esters of lemon and red berries are complemented by peppery phenols. Low, grainy malt character and a hint of earthy, toasted oak from the foeder.
Taste. Initial impression is zesty and crisp. Moderate peppery phenolics and citrus esters blend with a sharp ginger snap and herbal hibiscus tartness. Low, grainy malt sweetness is quickly overtaken by a moderate hop bitterness and a bone-dry, highly attenuated finish. Subtle wood-derived tannins and a lingering spicy aftertaste.
Mouthfeel. Medium-light body with very high, prickly carbonation that is effervescent on the tongue. Low alcohol warmth. Slight drying astringency from the hibiscus and foeder wood adds to the refreshing character.
