This Experimental Mead presents a bold, boundary-pushing sensory experience inspired by a traditional Thai Mango Salad. The nose is dominated by lush, ripe mango and a complex interplay of Bourbon barrel-derived vanilla and oak, underscored by a savory hint of roasted peanuts and sharp spices. On the palate, the high alcohol content provides a significant warmth that carries flavors of honeyed fruit and earthy spices, reminiscent of capsicum and lime. The influence of the Bourbon barrel aging adds a sophisticated layer of toasted wood and whiskey-like depth. It finishes with a unique balance of dessert-like sweetness and a lingering, savory, spicy kick.

Appearance. Deep gold to amber with orange hues; traditionally still with no foam or lacing; cloudy to opaque due to the heavy addition of mango puree and peanut oils.

Aroma. High intensity; dominant aromas of tropical ripe mango and floral honey; significant secondary notes of vanilla, toasted oak, and bourbon; distinct savory accents of roasted peanuts and a sharp, spicy edge suggesting chili or ginger.

Taste. Initial impression is intensely sweet with rich honey and mango nectar; mid-palate reveals complex bourbon notes and wood tannins; the unique Som Tum character emerges through savory spice and a faint nuttiness; no hop bitterness; finish is long and warming with a lingering spicy-sweet contrast.

Mouthfeel. Full-bodied and viscous; very low to no carbonation (still); significant alcohol warmth from the 12% ABV and barrel aging; smooth and slightly oily texture from the peanuts; light tannic astringency from the oak.
