MadX Skogkatt presents as a sophisticated, dry Wood-Aged Mead that artfully balances intense fruit character with refined oak structure. The deep crimson pour releases a high-intensity bouquet where fresh, tart raspberries meet the vinous, tannic influence of Sauska barrel aging. On the palate, the honey's floral essence is transformed into a bone-dry profile, allowing the vibrant acidity of the raspberries to shine alongside complex notes of vanilla, toasted wood, and a hint of dark fruit from the wine-seasoned staves. This high-alcohol offering maintains a clean fermentation character, finishing with a lingering, puckering dryness and a gentle, warming glow.
Appearance. Deep ruby to crimson in color. Brilliant clarity with no sediment. Still presentation with no head, carbonation, or lacing.
Aroma. High intensity of fresh, slightly tart raspberries dominates. Subtle floral honey notes are present but secondary to the fruit. Strong wood-aged character featuring toasted oak, light vanilla, and a vinous red wine quality from the Sauska barrel. Clean fermentation with no notable esters or phenols.
Taste. Bone-dry initial impression with an immediate surge of tart raspberry fruit and seed-like pithiness. The honey flavor is delicate and floral, stripped of sweetness. Moderate wood character provides a structural backbone of oak and drying tannins. No hop bitterness. The finish is exceptionally dry and long, lingering with berry acidity and a touch of red wine vinousness.
Mouthfeel. Medium-full body with a slight syrupy weight despite the dryness. No carbonation (still). Noticeable but smooth alcohol warmth. Moderate tannin-driven astringency from both the fruit skins and the oak barrel.
