This enticing farmhouse ale offers a complex, rustic journey, marrying classic Saison funk with vibrant adjuncts. Vibrant aromas of tart red raspberry and toasted coconut greet the nose, underscored by a soft blanket of warm vanilla and earthy, barnyard yeast character. On the palate, a crisp, dry profile typical of a traditional farmhouse ale is beautifully balanced by the juicy acidity of fresh raspberries and a rich, toasted coconut undertone. The finish is remarkably dry and effervescent, leaving a lingering, complex interplay of rustic yeast, subtle oak-like vanilla, and bright, tangy fruit.

Appearance. Hazy, deep pink to soft reddish-amber in color, displaying a luminous, unfiltered glow. It is topped by a persistent, dense, rocky pink-tinted white head that leaves delicate, web-like lacing along the glass as it slowly recedes, driven by high, effervescent carbonation.

Aroma. Pronounced aroma intensity presenting a complex fusion of tart, ripe raspberries and rich, sweet roasted coconut, backed by smooth vanilla. Underneath the dominant fruit and adjunct notes lies a classic farmhouse yeast character, showing moderate earthy funk, rustic leather, and subtle peppery phenols, with a very low, clean grainy malt presence.

Taste. The initial impression is bright and lively, dominated by the sharp, tangy tartness of fresh raspberry. This is quickly balanced by the mid-palate richness of toasted coconut and a soothing, creamy wave of vanilla. Low grainy malt flavor supports the profile. Hop bitterness is low to moderate, overshadowed by a pleasant, lactic-like tartness that enhances the exceptionally dry finish. Complex aftertaste of lingering berry skins, dusty funk, and toasted wood.

Mouthfeel. Medium-light body with a remarkably crisp, effervescent mouthfeel driven by very high carbonation. A soft, creamy texture from the coconut and vanilla lends a deceptive fullness without sweetness, complemented by a light, gentle alcohol warmth and a refreshing, puckering acidity.
