MadX Idunn presents a sophisticated fusion of orchard and hive, weaving pure apple juice with eighty-five kilograms of mixed floral honey into a potent sack-strength Cyser. Fermentation with Brettanomyces adds a rustic, farmhouse layer of leather and light funk to the base of crisp apple and sweet nectar. Barrel aging contributes a structured wood character and rounded tannins, softening the 15% ABV into a warming, contemplative experience. This collaboration showcases a vibrant interplay between the floral sweetness of the honey and the tart acidity of the cider base, finishing with a complex, lingering dryness and a whisper of wild yeast character.

Appearance. Deep gold to light amber (SRM 6-9). Still to very low carbonation with no head or lacing. Brilliant clarity despite the alternative fermentation.

Aroma. High intensity with prominent floral honey and waxy wildflower notes. Sharp green apple and fermented cider aromas are layered with Brettanomyces-driven funk, manifesting as light leather and earthy spice. Noticeable ethanol warmth and a hint of vanillic oak from barrel aging.

Taste. Initial impression is a rich honey sweetness immediately countered by tart apple acidity and cider-like tannins. Complex floral nectar flavors dominate the mid-palate, followed by rustic farmhouse notes of leather and hay. Hop bitterness is absent, with balance provided by fruit acidity and oak tannins. The finish is long and warming with a lingering dry, apple-skin aftertaste.

Mouthfeel. Full-bodied and viscous with a heavy mouth-coating quality. Carbonation is low to still. Significant alcohol warmth is present but smooth. Lightly astringent from the apple skins and barrel contact.
