A sophisticated collaboration with Brouwerij Alvinne, this barrel-aged Saison offers a vibrant sensory journey. The aroma is dominated by the lush, musky sweetness of ripe cantaloupe, harmonizing with the rustic, peppery phenols of a traditional farmhouse yeast. The palate experiences a sharp, refreshing lactic tartness that underscores the fruit, while the oak aging contributes a delicate structure of vanilla and dry tannins. Effervescent and bone-dry, the beer features a grainy malt backbone and a complex fermentation profile. It culminates in a bright, acidic finish with lingering notes of sun-drenched hay and tropical melon, exemplifying a masterfully balanced wild ale.

Appearance. Deep gold to pale orange with a hazy, unfiltered clarity. Pours with a dense, ivory head that displays moderate retention and leaves light Belgian lacing; highly effervescent.

Aroma. High intensity aromatics of fresh cantaloupe and tropical esters. Moderate spicy yeast character reminiscent of cracked black pepper, complemented by a sharp, lactic acidity and subtle notes of oak and sun-dried hay. Hop character is low and earthy.

Taste. Initial impression is a bright, tart acidity followed quickly by succulent cantaloupe melon. Low grainy malt sweetness is rapidly overtaken by spicy yeast phenols and a dry, wood-influenced complexity. Bitterness is low, as the lactic sourness provides the primary balance. The finish is exceptionally dry and crisp with a lingering fruit and citrus aftertaste.

Mouthfeel. Medium-light body with very high, prickly carbonation. Provides a light, pleasant alcohol warmth and a subtle, puckering astringency from the souring process and oak contact. Refreshing and highly attenuated.

A savanyú sör olyan sör, amelynek szándékosan savanyú, savas vagy fanyar íze van. A hagyományos savanyú sörök közé tartoznak a belga lambic, a gueuze, a flamand vörös sörök, valamint a német gose. A savanyú sörök úgy készülnek, hogy vadélesztő törzseket vagy baktériumokat engednek a főzetbe, majd felforralják a sörlevet, hogy elpusztuljanak ezek a baktériumok és később ne befolyásolhassák az erjedést.
A savanyított sörhöz leggyakrabban használt mikrobák a Lactobacillus és a Pediococcus baktériumok, míg a Brettanomyces gomba szintén hozzáadhat némi savasságot a sörhöz.
