This Wild Specialty Beer, built on a refreshing Berliner Weisse foundation, offers a vivid sensory experience centered on the addition of tart gooseberries. The aroma is defined by a sharp lactic acidity that intermingles with the distinctively green, herbal, and slightly floral scent of fresh fruit. On the palate, a puckering sourness highlights the gooseberry’s vinous qualities, reminiscent of unripe grapes and kiwi. A delicate, bready wheat character provides a brief structural counterpoint before the profile shifts to a bone-dry finish. Effervescent and light, this wild ale focuses on bright acidity and clean fruit expression with high carbonation.

Appearance. Pale straw (SRM 2–3) with a slight haze from the wheat base and fruit additions. The white head is moderate upon pouring but lacks persistence, characteristic of high-acidity styles, leaving minimal lacing.

Aroma. High intensity lactic sourness dominates, complemented by a prominent green fruit character. The gooseberry provides notes of white grape, citrus, and a hint of damp earth. Malt is low, appearing as a clean, sourdough-like wheat scent.

Taste. Initial impression is sharply acidic and tart. The gooseberry flavor is clear and bright, providing a tangy fruit-skin zest. Malt flavor is very low and crackery, serving only to support the fermentation profile. Bitterness is absent, and the finish is remarkably dry and clean without any lingering sweetness.

Mouthfeel. Light body with very high, prickly carbonation that enhances the perceived acidity. No alcohol warmth is present. A very subtle astringency from the fruit skins adds a refreshing crispness to the mouthfeel.
