This clean Berliner Weisse presents a sharp, refreshing sensory profile defined by its crisp lactic acidity and effervescent nature. The malt bill, featuring a blend of Pilsner and wheat malt, provides a delicate sourdough and raw bread dough foundation that supports the dominant sour character. Subtle esters of tart apple and lemon zest emerge from the fermentation, adding a bright fruitiness without the presence of hop aroma or bitterness. Appearance. Pale straw color (2-3 SRM). Exhibits a slight haze with a large, dense white head that shows poor retention. Highly effervescent with visible rising bubbles.
