MadCat’s drž peach-u! is a vibrant Wild Specialty Beer that showcases a harmonious collision of rustic fermentation and succulent stone fruit. Brewed in collaboration with Malt Worm, this expression leads with a sharp, lactic acidity that brightens a rich aromatic profile of fuzzy peach skin and wild Brettanomyces funk. The sensory experience is defined by its refreshing tartness and a bone-dry finish, stripping away residual sugars to leave behind the pure essence of peach and leathery complexity. Effervescent and lean, it balances the fruit's natural tannins with a light malt backbone, delivering a sophisticated, funky, and fruit-forward profile typical of contemporary wild ales.
Appearance. SRM 4–7; pale gold with a distinct orange-pink hue from the peaches. Hazy to opaque clarity. White head with moderate to low retention due to the acidity and fruit oils.
Aroma. High intensity. Dominant fresh peach and stone fruit aromatics blended with moderate funky Brettanomyces notes of leather and barnyard. Noticeable lactic acidity and a very low, cracker-like malt presence.
Taste. Sharp, clean lactic sourness followed by an intense flavor of fermented peach flesh and skin. Virtually no hop bitterness or flavor. The malt is a neutral, supportive backdrop. Finishes bone-dry and tart with lingering fruit esters and a hint of funk.
Mouthfeel. Light body with a thin, refreshing texture. High carbonation provides a prickly sensation. Minimal alcohol warmth and a slight tannic astringency from the fruit skins enhance the overall dryness.
