Appearance. Deep ruby to garnet red with a persistent, light pinkish-white head. Notable haze from fruit solids and poppy seeds; moderate lacing is present.
Aroma. High intensity of tart cherry juice and dark fruit esters. Distinctive notes of creamy vanilla pods and a faint, earthy nuttiness from poppy seeds. Clean lactic acidity is prominent, with no hop aroma or diacetyl.
Taste. Initial impression is a sharp, juicy cherry tartness followed by a mid-palate of vanilla sweetness and subtle poppy seed earthiness. Low bitterness with no hop flavor. The balance is firmly on the acidic side, though softened by the vanilla. Finishes clean and dry with a lingering cherry skin astringency.
Mouthfeel. Medium-light body with moderate to high carbonation that enhances the perceived acidity. Very low alcohol warmth. A slight creaminess from the vanilla prevents the beer from feeling overly thin or watery.
