This Sour Ale presents a deep, jewel-toned appearance and a complex bouquet where sharp, vinous acidity meets earthy dark berry depth. The palate is defined by a bracing tartness that elevates the jammy blackberry core, while the black currants contribute a distinctive, slightly tannic skin character and zesty brightness. It balances a clean, lactic tang with the rustic nuances of wild fermentation, finishing bone-dry and refreshingly crisp. Appearance. Striking deep purple to dark ruby hue (SRM 25-35) with a slight haze. A pinkish-violet head forms with moderate retention, leaving light lacing as it recedes.
Aroma. High intensity aromatics of fresh black currant and muddled blackberries. A noticeable lactic tartness provides a sharp edge, complemented by subtle earthy undertones and a faint, rustic funk typical of wild fermentation. Malt is nearly undetectable, and hop aroma is absent.
Taste. Immediate, sharp lactic sourness that is clean but assertive. The fruit flavors are prominent, featuring the tart, slightly astringent character of black currant skins and the juicy essence of ripe blackberries. The base malt is light and crackery, quickly giving way to a dry, vinous finish. No hop bitterness is perceived; fruit acidity and mild tannins provide the structure.
Mouthfeel. Medium-light body with high, prickly carbonation that enhances the perceived acidity. A slight puckering astringency from the fruit skins is present, alongside a mild, well-integrated alcohol warmth.
