MadCat Biere Brut 2023 is an elegant fusion of brewing and winemaking, crafted in collaboration with Proquin winery. This Belgian Golden Strong Ale undergoes secondary bottle fermentation with champagne yeast, resulting in a bone-dry, sophisticated profile reminiscent of fine sparkling wine. Expect a brilliant, effervescent pour that releases delicate aromas of pear and pome fruit esters alongside subtle peppery phenols and herbal hop notes. The palate is defined by its crisp, highly attenuated finish and lively carbonation, balancing soft pilsner malt with a firm, lingering bitterness. It is a refined, celebratory experience that perfectly highlights the intersection of traditional malt and grape-inspired techniques.
Appearance. Pale yellow to gold (3–6 SRM). Brilliant clarity with persistent, vigorous effervescence. Features a massive, long-lasting, rocky white head that leaves significant lacing on the glass.
Aroma. High intensity bouquet of fruity esters, primarily pear and apple. Low to moderate herbal and spicy hop character is present. Subtle peppery alcohol and phenols are detectable over a nearly neutral, slightly grainy-sweet malt base.
Taste. Initial impression is bone-dry and crisp. Flavors of pear-like esters and peppery alcohol carry through the palate. Malt character is soft and subordinate. Bitterness is medium-high and accentuated by the high attenuation, leading to a long, dry, and clean aftertaste with lingering herbal hop notes.
Mouthfeel. Medium-light body, appearing lighter than the gravity suggests. Very high, effervescent carbonation creates a sparkling sensation. Smooth alcohol warmth is noticeable but well-integrated, lacking any harshness or solvent character.
