Mad Sur presents a vibrant, acidic profile rooted in spontaneous fermentation and citrus brightness. The base of Pale malt and unmalted wheat provides a delicate, bready foundation that supports a sharp, clean lactic sourness. The addition of yuzu elevates the sensory experience with intense, exotic citrus notes that harmonize with the tart apple and lemon esters characteristic of its wild origin. Though brewed with aged hops, there is no perceptible hop bitterness, allowing the crisp, refreshing acidity to take center stage. This Straight Sour Beer offers a sophisticated interplay between rustic grains and vibrant fruit, finishing bone-dry and effervescent.
Appearance. Pale straw color (3 SRM). Hazy to somewhat opaque due to the use of unmalted wheat. Large white head with relatively poor retention and minimal lacing, typical of highly acidic spontaneous ales.
Aroma. Intense lactic sourness dominates, layered with a high, exotic citrus punch from yuzu. Secondary aromas of tart green apple and lemon pith. The malt character is low but present as bready and grainy notes from the Pale malt and unmalted wheat. No hop aroma is present due to the use of aged hops.
Taste. Sharp, clean lactic acidity is the primary impression, followed quickly by the zesty, floral citrus flavor of yuzu. Pale malt provides a subtle crackery and bready backbone. Hop bitterness is undetectable. The finish is very dry, crisp, and refreshing with a lingering citrus tartness.
Mouthfeel. Light-bodied with a sharp, prickly carbonation that enhances the perceived acidity. Low alcohol warmth at 5.5% ABV. Crisp and refreshing without any astringency or heavy viscosity.
