Mad Squirrel Brewery

Yosemite is a vibrant West Coast Rye IPA that captures the essence of a Californian vista through its assertive sensory profile. This Specialty IPA leads with a punchy hop character of pungent pine, sticky resin, and bright citrus zest. The inclusion of Rye malt is central to its identity, imparting a distinctive peppery spiciness and a lean, grainy backbone that enhances the beer’s perceived dryness. Assertively bitter in the classic West Coast fashion, it balances hop-forward intensity with the rustic, spicy edge of the grain. At 5.9% ABV, it remains crisp and highly drinkable, finishing with a lingering resinous snap.

Appearance. Medium amber to copper (10–14 SRM) with reddish hues. Brilliantly clear with a large, persistent off-white head that leaves significant lacing on the glass.

Aroma. High intensity hop aroma featuring notes of resinous pine and grapefruit. Supported by a moderate bready malt character with a distinctively spicy, peppery rye presence. Clean fermentation profile.

Taste. Initial impression of citrus and resinous hops followed by a grainy, spicy rye malt flavor. High hop bitterness (consistent with West Coast styles) that is firm and well-defined. The finish is dry and crisp with a lingering peppery spice and hop resin aftertaste.

Mouthfeel. Medium body with a smooth, slightly oily texture typical of rye additions. Moderate carbonation and light alcohol warmth. Finishes clean without harshness.
