This Imperial Stout presents an intricate sensory tapestry, merging deep roasted malts with adventurous adjuncts. An immediate wave of dark chocolate and espresso is uplifted by the distinctive, herbal, and resinous snap of Green & Black Cardamom. The addition of Plums introduces a bright, slightly tart dark fruit layer that cuts through the viscous, jet-black body. A year of aging in Knob Creek Rye barrels imparts a sophisticated spice, oaky vanilla, and a hint of smoky char. The finish is long and complex, balancing a pleasant alcohol warmth with lingering notes of exotic spice and dried fruit, reflecting its potent strength and meticulous barrel integration.
Appearance. Jet black and completely opaque (SRM 40+). It features a thick, creamy, deep tan head with moderate retention and leaves significant legs on the glass due to high viscosity and alcohol content.
Aroma. Intense and multifaceted, featuring a core of bittersweet chocolate and roasted coffee. Pronounced notes of Plums provide a jammy, slightly acidic fruit character, while Green & Black Cardamom adds a cooling, menthol-like and smoky spice complexity. The Knob Creek Rye barrel contributes clear aromas of spicy rye grain, toasted oak, and a touch of charred wood.
Taste. The initial impression is a powerful blend of charred malt and rich cocoa. Mid-palate, the tartness of Plums emerges, harmonizing with the unique herbal, woody, and slightly citrusy flavors of cardamom. Hop bitterness is moderate to high but balanced by the malt density. The Knob Creek Rye barrel aging adds layers of peppery spice and a faint smokiness that leads into a drying, warming finish with a lingering aftertaste of dark fruit and roasted grain.
Mouthfeel. Full-bodied and velvety with a thick, chewy, and luscious texture. Carbonation is low to moderate. A significant but smooth alcohol warmth is noticeable as a background character, complemented by a light tartness and a touch of spice-driven astringency.
