This Cognac barrel-aged Imperial Stout presents a decadent sensory journey, merging intense roasted malts with a playful cookies and cream profile. The initial impact is defined by rich bittersweet chocolate and a velvety vanilla cream sweetness, reminiscent of chocolate cookies. Deep vinous notes from the Cognac barrels introduce sophisticated layers of dried plum and apricot, which meld seamlessly with the high-ABV warmth. Subtle charred oak and dark cocoa provide a sturdy backbone to the dessert-forward character. Appearance. Jet black and fully opaque (SRM 40+). Pours with a dense, dark tan to mocha-colored head with moderate retention. Pronounced viscosity is evident in the thick, oily legs that coat the glass upon swirling.
Aroma. High intensity and deeply complex. Dominant aromas of dark chocolate and vanilla bean are layered over a rich, vinous Cognac character. Notes of toasted oak, caramel, and dark fruits like raisins and prunes emerge as it warms, supported by a mild, clean alcohol presence and a hint of roasted grain.
Taste. An opulent initial impression of chocolate cookies and sweet cream. The mid-palate reveals deep roasted malt bitterness, coffee, and dark cocoa, which are expertly balanced by the honeyed, spirituous warmth of Cognac and oak tannins. The finish is moderately sweet and lingering, with an aftertaste of vanilla, dark fruit, and smooth alcohol.
