This monumental Imperial Stout, a collaboration between Mad Scientist and Casino Mocca, presents a masterful integration of high-gravity brewing and precision roasting. The sensory experience is dominated by the Koke Shalaye Ethiopian coffee, which imparts vibrant notes of jasmine, stone fruit, and a bright, berry-like acidity that cuts through the viscous malt base. Layers of dark chocolate and molasses from the heavy roast provide a sturdy foundation, while the 13% ABV delivers a sophisticated, smooth warmth. It is an intense, multi-dimensional beer where the floral elegance of the coffee harmonizes perfectly with the deep, charred sweetness of the malt.
Appearance. Opaque, ink-black (SRM 40+) with a thick, creamy, dark-tan to mocha-colored head that persists well. Some oily legs are visible on the glass, characteristic of the high alcohol and coffee oils.
Aroma. High intensity with a complex marriage of deeply roasted malts and specialty coffee. The aroma features prominent notes of fresh-ground espresso, dark cocoa, and toasted bread, layered with the specific floral and citrusy esters of Ethiopian coffee. Clean alcohol warmth is present but not sharp.
Taste. The initial impression is rich and decadent, featuring flavors of bittersweet chocolate, burnt sugar, and molasses. The Koke Shalaye coffee contributes distinctive flavors of blueberry and apricot, along with a refined acidity. Hop bitterness is moderate but supported by a significant roasted grain bitterness. The finish is long and complex, evolving from sweet malt to a dry, lingering coffee aftertaste.
Mouthfeel. Full-bodied and viscous with a velvety, coating texture. Carbonation is moderate-low, enhancing the richness. A significant, pleasant alcohol warmth is felt without being harsh or fusel. Low astringency despite the heavy roast and coffee addition.
