This Jamaican Rum barrel-aged Imperial Stout offers a decadent sensory journey, merging the brooding intensity of charred malts with a vibrant tropical character. The addition of sundried mango creates a concentrated, leathery fruit depth that contrasts beautifully against the base's dark chocolate, espresso, and black licorice notes. Influence from the rum barrels introduces layers of spicy oak, molasses, and vanilla, providing what the brewer calls a 'tropical blast' and a 'kiss of the summer.' The result is a robust and sophisticated profile where the chewy fruit sugars and spicy spirit notes harmonize with a deeply roasted, velvety finish.
Appearance. Jet black and opaque (SRM 40+). Features a thick, dense, deep tan head with moderate retention. High viscosity is apparent through visible legs (marangoni effect) on the glass.
Aroma. High intensity. A complex blend of bittersweet chocolate, roasted coffee, and molasses. The sundried mango provides a concentrated tropical fruitiness, layered with Jamaican Rum notes of spicy oak, vanilla, and dark sugar. Very low earthy hops and a smooth, vinous alcohol presence.
Taste. Rich and intensely flavored with an initial impression of dark fruit and caramel sweetness. Deeply roasted grain flavors of cocoa and charred toast are prominent, balanced by a firm bitterness. The sundried mango adds a distinct tropical sweetness that persists into the mid-palate. The finish is long, bittersweet, and warming, with lingering notes of rum-soaked oak and dried fruit.
Mouthfeel. Full-bodied and exceptionally chewy with a luxurious, velvety texture. Carbonation is low to moderate. A significant, smooth alcohol warmth is present, which enhances the spicy barrel character without being sharp or solventy.
