Late Bloomer is a decadent Imperial Porter that underwent a transformative 40-month journey in Oloroso Sherry barrels, infused with botrytis-affected Tokaji Aszú grapes. The sensory profile is defined by a deep chocolate and roasted malt foundation, typical of an American Porter, but elevated by intense notes of raisins, toasted nuts, and honeyed stone fruit. The Oloroso influence introduces a sophisticated oxidative nuttiness, while the late-harvest grapes provide a unique, concentrated sweetness. Firm wood tannins provide structure to the rich, velvety body. High alcohol warmth and lingering dark fruit esters create a complex, slow-sipping experience where patience is rewarded with layered flavors of dark cocoa and luscious vine-dried fruits.
Appearance. Opaque, very dark brown nearing black with deep garnet highlights. Topped with a dense, creamy, tan-colored head showing moderate retention and fine lacing.
Aroma. High intensity; prominent aromas of dark chocolate and medium-strong roasted malts. The barrel aging contributes layers of nutty Oloroso sherry, raisins, and dried figs. Unique honeyed and floral notes from the botrytis-infected Tokaji Aszú grapes blend with moderate fruity esters and a noticeable, well-integrated alcohol presence.
Taste. Bold initial impression of rich chocolate and roasted grain. The mid-palate is dominated by the complex interplay of nutty Oloroso sherry and the concentrated sweetness of Tokaji Aszú grapes. Hop bitterness is moderate but provides balance against a medium-sweet finish. Tannic structure from the wood is evident, leading to a lingering aftertaste of dark fruit and cocoa.
Mouthfeel. Full-bodied and viscous with a smooth, velvety texture. Carbonation is moderate. A significant, pleasant alcohol warmth is present, complemented by a slight, purposeful wood-derived astringency and lack of acridity.

It’s scary how time flies, one day you fill your first barrel and kaboom, 40 months pass by. If we look at it less dramatically, Oloroso is a slow barrel, you need the patience to have its taste fully showcased, but worth the waiting. Raisins, nuts and chocolate are the main characteristics while it’s quite strong in tannins, too. The best part is that we managed to get some Tokaji aszú grapes, a unique Hungarian terroir variety, infected with botrytis fungi, harvested late, that provides an incredible taste. We aged them in the barrel and now you can witness the magic of patience too…
