This Imperial Stout presents a complex, culinary-inspired profile derived from its dual maturation in Scotch and Bourbon barrels. The sensory experience opens with an intense layering of dark chocolate and vanilla, punctuated by distinct aromatic notes of herbal rosemary and earthy smoked cocoa. On the palate, the rich, roasted malt base is enhanced by a savory touch of smoked salt, which heightens the depth of the oak and charred wood character. At 11.3% ABV, it offers a sophisticated warmth that integrates seamlessly with the lingering impressions of bitter cocoa and resinous herbs, creating a bold, harmonious, and avant-garde interpretation of the style.
Appearance. Jet black and opaque (SRM 40). It pours with a thick, deep tan head that shows moderate retention. Pronounced viscosity is evident through visible legs when the glass is swirled.
Aroma. High intensity. A complex bouquet of bittersweet chocolate, espresso, and vanilla-laden oak. Distinctive herbal rosemary provides a resinous top note, while smoked cocoa adds a layer of campfire earthiness. Subtle dark fruit esters of prune and raisin mingle with a noticeable but smooth alcohol warmth and a hint of peat from the Scotch barrels.
Taste. The initial impression is a rich, velvety wave of dark chocolate and charred grain. Mid-palate, the rosemary provides a savory, botanical counterpoint to the sweetness of the Bourbon-derived vanilla. Smoked salt sharpens the flavors, enhancing the oak tannins and smoky cocoa depth. Mouthfeel. Full-bodied and chewy with a luscious, velvety texture. Carbonation is low to moderate, emphasizing the beer's significant weight. A smooth alcohol warmth is present and well-integrated, accompanied by a slight, pleasant astringency from the oak and smoke.

From time to time we take big risks and move away from the comfort zone of nuts-vanilla-sweet spices to try some nonsense. In this case, the motivation came from culinary experiences where the rosemary, the cocoa, and the salt are long-time friends, so why not to try them in beer, maybe alongside with some smoke? The base itself is a blend of scotch and bourbon barrel-aged imperial stout that brings chocolate, vanilla, and strong oak notes to the party. The result is an unusual banger (according to our humble opinion, of course).
