Beeznuts is a decadent Imperial Stout and mead hybrid that envelops the senses in a rich tapestry of barrel-aged complexity. The profile is dominated by bourbon-soaked oak and lush vanilla, leading into a deep, chocolaty core derived from heavy roasted malts. A unique honey-like sweetness from the mead component provides a velvety backbone for the primary additions: hand-roasted walnuts and pistachios. These nuts contribute a savory, earthy depth that counters the intense 13% alcohol. The finish is long and indulgent, melding dark chocolate bitterness with a lingering nuttiness and a smooth, warming bourbon character that defines this exceptional hybrid project.

Appearance. Jet black and opaque (SRM 40+). It supports a thick, deep tan head with moderate retention, though high viscosity and alcohol content leave prominent legs on the glass.

Aroma. High intensity and deeply complex. Initial waves of bittersweet chocolate and espresso are layered with sweet, floral honey and rich bourbon-induced vanilla. The roasted walnuts and pistachios add a distinct savory, nutty top note, while subtle dark fruit esters like raisins and prunes emerge as the beer warms.

Taste. An opulent initial impression of liquid dark chocolate and honeyed malt. The mid-palate reveals the roasted, earthy character of walnuts and pistachios, followed by bourbon-soaked oak and vanillins. Bitterness is moderate but firm enough to balance the significant residual sweetness. The finish is long and luxurious, with a harmonious blend of nutty oils, cocoa, and smooth alcohol warmth.

Mouthfeel. Full-bodied and exceptionally chewy with a velvety, luscious texture. Carbonation is low, enhancing the creamy mouthfeel. A significant, smooth alcohol warmth is present, reflecting its high gravity without being sharp or solventy.
